Here's my twist for today. I have joined The 30 Day Vegan Challenge. It's $20 for the month and I thought it would give me some new ideas, tips and suggestions. While I already know a lot of this I think it's inspiring me to eat better and cook more at home.
You get daily messages, recipes, videos, audio podcasts and resources. I haven't explored all of it but am enjoying everything so far. While speaking with a friend, she shared that for health reasons she's going vegan and decided embark on the challenge to help with the transition. WOW! I felt like I had helped someone out with a quick conversation.
One of the recipes given is Garlic & Greens Soup. I love it so much I've made it twice even though it's really hot here. The first time I forgot to add in the seasoned rice vinegar. Although it was good the addition takes this soup to a whole new level.

What's been difficult for you since going vegan? How do you make sure you get a well balanced diet?
Let me know what you think of this soup if you make it. I LOVE it. I mean really doesn't making it 2 times in 3 days tell you that.
