I had never heard of, let alone eaten quinoa before I became vegan. Now I can't get enough of it. If you haven't tried it before I highly recommend it. It has a bit of a nutty flavor and is easy to "throw" together as an addition to any meal. I'm always on the hunt for ways to add it into my meals.

Needless to say when I came across this recipe from Bryant Terry's The Inspired Vegan for coconut quinoa I was interested. I added a bit more shredded coconut than it called for but it was worth it.
